Healthy Gingerbread

We’ve found a way for you to create a healthier festive treat. Here’s our recipe that uses natural sweeteners to satisfy your sweet tooth…
INGREDIENTS:
  • 1 cup of wholemeal plain flour

  • 1/2 cup of coconut sugar

  • 2 tsp of baking powder

  • 2 tsp of ground ginger

  • 2-3 tsp of cinnamon (depending on your preference)

  • 2 tsp of mixed spice

  • 1/4 cup of molasses

  • 40g of Lard Ass butter

  • 2 tbsp of Honest To Goodness maple syrup

  • 1 egg

METHOD:
  1. Preheat the oven to 180ºC and line a baking tray with baking paper or one of our Ever Eco silicone baking mats.

  2. Melt the butter, molasses, maple syrup and coconut sugar in a saucepan over a low heat.

  3. Remove the mixture from the heat and allow to cool for 5 minutes.

  4. Once cooled, whisk in the egg.

  5. Combine the rest of the dry ingredients into a bowl and slowly stir in the melted butter, sugar, egg and syrup mixture.

  6. Knead into a dough and roll out onto a floured bench to be about 5mm thick.

  7. Use cookie cutters or a knife to cut into your desired shapes.

  8. Place onto baking tray and bake for 8-10 minutes.

  9. Allow the cookies to cool and decorate or enjoy them as they are.
