INGREDIENTS:

1 cup of wholemeal plain flour

1/2 cup of coconut sugar

2 tsp of baking powder

2 tsp of ground ginger
-
2-3 tsp of cinnamon (depending on your preference)

2 tsp of mixed spice
-
1/4 cup of molasses
-
40g of Lard Ass butter
-
2 tbsp of Honest To Goodness maple syrup

1 egg
METHOD:

Preheat the oven to 180ºC and line a baking tray with baking paper or one of our Ever Eco silicone baking mats.

Melt the butter, molasses, maple syrup and coconut sugar in a saucepan over a low heat.

Remove the mixture from the heat and allow to cool for 5 minutes.

Once cooled, whisk in the egg.

Combine the rest of the dry ingredients into a bowl and slowly stir in the melted butter, sugar, egg and syrup mixture.

Knead into a dough and roll out onto a floured bench to be about 5mm thick.

Use cookie cutters or a knife to cut into your desired shapes.

Place onto baking tray and bake for 8-10 minutes.

Allow the cookies to cool and decorate or enjoy them as they are.
